It is easiest to make when you have all of your ingredients ready before you start to cook. Then it all comes together quite quickly.

You can use your taste preferences and creativity to easily change up the protein, cheese, and vegetables in this recipe to make a buffet of variations of this dish. Try Spinach, Mushrooms and Mozzarella, Grape Tomatoes and Asparagus, Zucchini with Onion. What is fresh and local in your area? There’s endless combinations and ways to change this up!

An added benefit of whipping up this recipe is you can wrap the portions up snugly in good saran wrap and in a fresh container for morning.
It reheats easily in a microwave just for temperature and melting the cheese.

*As an aside, I personally prefer using and supporting Pasture Raised Chicken Eggs that live with fresh air and sunshine, and eat as they’re intended to, on a natural diet that’s high in protein. We have some local chicken farmers that carry them and they also sell them in fresh markets. The nutrition differences are notable and there is no mistaking the depth of flavor.

 

Make Ahead Egg Breakfast

    Ingredients

    • 6 eggs scrambled
    • 6 strips of turkey bacon crumbled
    • 3 tricolored peppers cleaned and sliced
    • 1 onion diced
    • 2 oz Shredded Mexican Cheese
    • oz Shredded Low Fat Shredded Mozzarella
    • 1 Cooking Spray

    Directions

    1. Most of this is preparation. Having what you need ready to throw it all together.
    2. Cook the bacon on a cookie sheet, turning over halfway through and crumble when cooled.
    3. Clean, slice and Sautee the Peppers & Onion in advance and set them aside.
    4. (You can do one while the other is cooking... I cook the bacon on a cookie sheet and make the peppers while they are baking.)
    5. Then have them on stand by to begin the layers.
    6. Preheat the oven to 350°
    7. Layer the Peppers in a cooking sprayed, oven safe, loaf sized, baking dish.
    8. Sprinkle the Peppers layer with Mexican Cheese.
    9. Add a Layer of Bacon.
    10. Sprinkle a layer of Mozzarella.
    11. Bake the peppers, bacon and cheese in a preheated 350° degree oven for 10 minutes to melt the cheese. Remove dish safely from the oven...
    12. Cook your Scrambled Eggs in a pre-sprayed non stick pan to reach a soft cooked consistency.
    13. Remove them from the heat and add the eggs to the layered dish.
    14. Press firmly and let stand for 10 minutes.
    15. Slice and serve with a spatula.
    16. Sprinkle with Parsley, Salt & Pepper to taste.
